I may be born and raised in the south, but I've never made fried chicken or mashed potatoes from scratch. I'm been craving comfort food, but don't want to go spend the $$$ on it at a take out place. So I got out my cook book and had everything I needed to make a southern dish.
Chicken and Mashed Potatoes from scratch! I used skinless, boneless chicken breast and fileted them to thin them out. And a little broccoli to counter act the "fried" part. I cut one breast into bite size chicken nuggets for the kids and gave them some honey mustard to go with. Family loved it!
